Our Nero di Troia grows in Orta Nova, in the territory of the Fiver Royal Sites, from grapes biologically cultivated on cordon espalier vineyards.
Matura – Atto Primo working process needs cure and patience. At the end of June we proceed with a selection of the grapes on the trees by cutting out part of them in order to obtain a production that doesn’t exceed 2,5 kg per plant. In the first week of October we cut the branch to let the grapes wither on the plant in order to obtain a natural alcoholic potential. After the manual harvest of the grapes, in the third week of October, the winemaking process is started using the biological method which is followed by the filling of the French oak barrels in which the wine rests for 6 months.
At the end of this authentic productive process, the 100% biological wine is of a deep ruby red color with fruity and floral spicy notes. Unique sensations confirm the authenticity and the territoriality of our Nero di Troia.
